Rocco's Tacos & Tequila Bar is looking for Sous Chefs for its Tampa location. Prior Mexican cuisine experience a plus! 3-5 years in a full service kitchen as a Chef, Sous Chef, or Kitchen Supervisor is required.
-Code invoice before sending to corporate.
-Enter invoices to the costing worksheet.
-All invoices must be signed by the Chef who enters them into the costing worksheet.
-Comply with all hiring procedures by interviewing, obtaining, and verifying proper documentation, and then entering information into the payroll program.
-Prepare Chef notes for weekly meeting and attend meetings.
-Plan all special events and menus on special event forms.
-Monitor emails throughout the shift.
-Cost out specials as needed to sell within agreed price point.
-Communicate specials to FOH Staff on a daily basis.
-You must be 100% knowledgeable of all techniques and ingredients to conduct effective line checks, up to three times daily, to monitor and ensure food quality and consistency.
-To expedite or schedule an expeditor at all shifts to send properly garnished, cooked, and presented to guests in a timely manner.
-To create special dishes that complement the menu in concept, design, and price point. Specials reflect the creativity and talent of the chef, which should be of the highest caliber. The chef should pursue continued growth in this area through reading, interacting with staff, and the corporate chef.
